SUMMUM, the highest quality designation of the Protected Designation of Origin Jabugo. A unique piece obtained from a 100% Iberian pig fed free in the pasture with abundant acorns.

PDO Jabugo, gives the designation of quality SUMMUM to those hams that have reached a harmony in all their organoleptic qualities, as well as a characteristic aromatic richness. All this due to the confluence of several factors; on the one hand, of a greater racial purity of the Iberian pigs, that live in full freedom in the pasture, keeping all the traditions of the breeding and fattening of the Iberian pig in the time of the montanera, where the pig feeds on acorns, on the other hand, a very slow development in the unique natural microclimatic conditions of the villages of the Sierra de Huelva.

Ham SUMMUM DOP Jabugo, belongs to the Jabugo Protected Denomination of Origin, and as such, complies with the demanding quality standards established by said Denomination. These hams are elaborated with great care by ham masters, since they are selected one by one and taken care of in their natural dryers.

Ham SUMMUM DOP Jabugo, have a smooth and juicy texture and a delicate flavor. Its characteristic color between pink and red-purple, with a brilliant cut appearance and with a characteristic veining, provided by the infiltrated fat in the muscular mass, thanks to the physical activity of the pig in his walks in the pasture.

Quality monitoring will be carried out by the Technical and Control Services, which will establish the appropriate indelible and inviolable identification throughout the production and processing process, that is, the control is carried out on the live pigs themselves, on the hams and shoulders after the sacrifice and finally before going to market.
